mustard balsamic chicken
I'm trying to cook more recipes that I can stick in the oven, and get a quick (very quick) workout in while everything cooks. Tonight I did this mustard balsamic chicken with roasted veggies and sliced baby potatoes in a skillet. And the chicken turned out great! Super moist and flavorful. I think I will add a little more salt next time, though.
Mustard Balsamic Chicken
- 6 chicken breasts or thighs
- 2 tablespoons mustard
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon dried rosemary
- salt and pepper to taste
Mix all ingredients. Pour over chicken and bake at 425 degrees for 20 minutes or until internal temperature reaches 165.
