You know THAT person at your holiday parties who is on a diet, or not eating carbs or not eating sugar or whatever? Ok, no one wants to be THAT person. Or have to host THAT person. Am I right? Well, to help you all not be THAT person, periodically I'll be posting recipes that represent the balance in my life. After all, this page is "mostly" whole living. Our family does a paleo/whole30 lifestyle 80% of the time, allowing for about 20% of our diet to be other creative and tasty meals with a bit more flexibility in our food choices. I also love to bake, and those goodies are usually full of lots of sugar and butter. So, to kick off these posts that represent the balance in my life, I have an incredible raspberry Brie en croute recipe. I made this as an appetizer for our family's Thanksgiving and everyone loved it! It felt like a sophisticated comfort food and the candied pecans brought the tastes of fall inside. I hope you enjoy this recipe and other pop-up recipes and can even use some of them at a holiday party you may have coming up. 

Raspberry Brie en Croute

Ingredients

  • large (11 oz) Brie wheel
  • one sheet puff pastry dough (refrigerated section of grocery store)
  • 1/2 cup raspberry preserves
  • 1/2 cup chopped pecans
  • 1 tablespoon butter
  • 3 tablespoons brown sugar
  • 1/8 teaspoon cinnamon
  • 1 beaten egg white

Roll out puff pastry dough and set Brie wheel in the center. In a small saucepan, melt butter, then add brown sugar and cinnamon and mix until melted. Add pecans and cook until browned. Spread raspberry preserves on top of Brie and sprinkle with pecan mixture. (I sprinkled on a little more brown sugar for good measure.) Wrap up dough at the top and twist dough together. Brush beaten egg white over the outside of the dough. Bake at 400 degrees for 10 minutes, then bring down to 325 degrees and bake for 20 more minutes. If your dough is getting too brown, cover it with foil until baking time is done to ensure the cheese is completely melted on the inside. 

We enjoyed this with crackers, but I also snagged a few bites without crackers and it was like a heavenly grilled cheese! Hope you enjoy it as much as we did.
