slow-cooker pulled pork
This is one of the easiest slow-cooker recipes that we eat off ALL. WEEK. I try to do one every Sunday afternoon and then get creative with it during the week. We eat it over a baked potato with guacamole, over salad with sweet potatoes and veggies, or over plantain chips with nacho fixings. I'm sure the possibilities are endless!
Ingredients
- Pork shoulder or pork roast (this will work with beef as well)
- 1 can chicken stock
- salt and pepper
- garlic powder
Directions
Spray slow-cooker with oil. Put roast in and pour chicken stock over it. Season with salt, pepper and garlic. Cook on high for 3-4 hours, or until it falls apart with a fork.
When it is finished cooking, pull it apart with a fork and spread it out on the bottom of the slow-cooker to help the meat soak up the juices. Take the lid off and let it cool while soaking in the extra moisture.
Serve over a baked potato, over a salad, or over plantain chips with nacho fixings.
